I would like to send a copy of the application PDF with the additional office use only fields to a specified email address. Are there some instructions on how to set this email address or what would be best practice to invoke this service. Can someone please point me in the right direction?
This can be configured at the Organization level as a Delivery Channel. You can either create a new Delivery Channel and configure accordingly or edit an existing one. Once that has been set to meet your needs, you would then assign the Form to that Organization to assume those Delivery Channel settings. I am attaching screenshots to help guide you there.

I have selected the "Delivery Receipt" checkbox (in the form version tab), and now all fields with the visibility rule "Util.isReceipt" shown on the PDF that is sent to the email address configured in that delivery channel.
I suppose its not very intuitive that the "Delivery Receipt" checkbox and the delivery services are tied together.
